Salted Cod Lettuce Wrap

Ingredient- cakes

1.5 cups Gochujang (Korean red pepper paste)

1 cup rendered chicken fat

4 lbs salted Cod (soaked overnight in water)

4 cup ice cubes

1/3 cup fish sauce

8 large egg yolk

½ cup brown sugar

2.6 tablespoon sea salt

2.6 cup green beans, very thinly sliced

.5 cup fresh kaffir lime leaves, very finely sliced

As needed for frying- peanut oil

Ingredient- sauce

2 lbs frozen spinach

2 cans of 13.5 ounces coconut milk

2-4 teaspoons Mae Ploy Yellow Curry Paste (or 2-3 teaspoons madras curry

powder)

1 teaspoon salt

2 teaspoon lemon zest

Ingredient- salad

1 medium daikon

1 bag cello carrot

1 bunch scallion

1 bunch cilantro

3-5 each Thai red pepper

1 btl Seasoned rice vinegar

1 btl sweet chili sauce

To taste salt

2 teaspoon lemon zest

2-3 tsp fresh ginger

Instructions

Place the Gochujang and fish in the work bowl of a food processor and pulse to combine. With the machine running, add the ice, fish sauce, egg, sugar and salt.
